Head Chef The Clink Cymru (2007)

I’m happy you’re here. You can call me Mike or many just call me Chef (It comes with the job)

You should know that I’m totally obsessed with food. I daydream about new recipes. I look at cookbooks & magazines for inspiration, I read up on food policy and nutrition. I love photographing food and hope my photos inspire you to step into the kitchen to cook a delicious, healthy meal.

Above all, I love eating food (Never trust a slim chef), especially while in the presence of good company. Good food in good company—does it get any better than that?

I believe that cooking should be fun and recipes, flexible. I choose to cook meat, but will try vegan & vegetarian. I believe in eating whole foods, which are foods that are as close to their source as possible. I’m also an avid supporter of the occasional indulgence, and I laugh with friends over drinks as often as possible.

This blog is all about celebrating good food—real, sustainable food that delights the senses and nourishes the body.

Even though I buy produce from all around the UK, My main passion is cooking Welsh produce. Honey, cheese, meat & dairy I will only buy Welsh, supporting welsh families who strive to produce the best they can along with local shops.

I have had the pleasure in past years to have a varied cooking experience in many different kitchen’s including my own pub restaurant, The Celtic Manor Resort, The Clink Cymru, Ministry kitchens and varied restaurants around Europe.

For the past 4.5 years I have left the kitchen for a position within Cardiff Metropolitan University, As a catering manager I cover a wide range of jobs on a day to day basis. However I still get time to cook at home, Mostly for the family but squeeze in some old recipes from alone the way with Doughnuts being the families biggest hit !!

Thank you,
