





This is one of my all time go-to soups
Homemade leek & potato soup
Had my delivery today from West country foods, had enough of doughnuts so went for soup
Recipe
4 peeled potato
2 large onion
2 leek’s
2 stock cubes
¾ water ¼ milk
Seasoning
Knob of butter
First
Cut the green tops from the leek and keep aside till later.
Simply chop everything up into large dice and place in the saucepan
Cover with water ¾ up the pan
Bring to boil and simmer for 20mins
Blitz with a hand blender till smooth
Top up with milk, stock cubes & knob of butter
Add green sliced leek tops and simmer for 10mins
I used fresh white bread tossed with ground onion seeds to mate croutons
Season to taste
